Black Bean Brownies 🌱🍫
How does one celebrate Earth Day 🌎?
Baking some Black Bean Brownies, packed with fiber, protein, iron and magnesium, of course. These fudgy, sweet brownies; are simple to make, using ingredients you may already have in your pantry, and all they need is a blender and a pan. Black Beans, a plant-based protein, used in burritos, tacos and….brownies. High-fiber foods, like black beans, have positive effects on blood glucose levels in diabetics, decrease risk of heart disease, supports a healthy digestive system, and an important factor in weight loss. Furthermore, black beans contain iron and magnesium that help maintain bone strength. Take your Black Bean Brownie and top with a scoop of @halotopcreamery Sea Salt Caramel Ice Cream….that’s superfood heaven 🤤

Ingredients (Makes 16 brownies):
- 1 – 15 oz can black beans (drain and rinse)
- ½ cup raw honey
- ½ cup cocoa powder
- 2 tbsp melted coconut oil
- 1 tsp vanilla.
- 1 tsp baking powder.
- 2 scoops of @vitalproteins Collagen Peptides
- ½ cup (78g) Enjoy Life Dark Chocolate Chips

Instructions:
1. Preheat oven to 350
2. Combine all ingredients except chocolate chips in blender.
3. Blend until smooth batter
4. Stir in chocolate chips
5. Spray brownie pan with non-stick spray (I used coconut oil spray). Pour and spread batter.
6. Bake for 20 minutes or until sides pull away from pan.
7. Let cool before cutting.
8. Top with a scoop of your favorite Halo Top Ice Cream flavor.
9. Enter Superfood Heaven 🙌🏻

I remember one night we shared in Germany during Oktoberfest, I witnessed how special this woman was and how much I saw myself in her. She has a heart of gold, and an intense love for life. Start A Change with A Single Step 👟
Walking, is one of the easiest forms of exercise. Something as simple as a brisk walk can help you live a healthier life. Adding a brisk 15-20 minute walk to your day can aid in maintaining a healthy weight, lowering the risk of chronic diseases like diabetes and heart disease, protect joints, improve gastric motility, and most importantly can improve one’s mood and lower stress levels. Over the past few months, I have become guilty of living the sedentary office life and find myself sitting more than I should or like to. Starting today, for next 6 weeks I am challenging myself to stay more active through the day and track my steps. My goals include continuous movement throughout my day such as a brisk walk outside or even remembering to stand once per hour. Join me these next 6 weeks starting today, April 16th to May 27th in this Step Challenge; and walk your way to a happier, healthier self!
